Chef Hernán Gipponi labored for years in kitchens in Spain’s Basque Country before returning to his native Argentina. His efforts paid off: The chef now has his own restaurant at a hot new boutique property, the Fierro Hotel in the Palermo Hollywood neighborhood of Buenos Aires. Hernán Gipponi Restaurante uses local ingredients and adds a molecular gastronomic twist, yielding dishes such as foamy yogurt with caramelized pumpkin seeds.
